

Brenda's Bruschetta
Ingredients 8-10 ripe Roma or Vine Ripe tomatoes
(Cut in half and remove the seeds with a spoon then dice tomatoes)
3 cloves garlic, minced
4 Tbsp light tasting olive oil
2 Tbsp balsamic vinegar
6 fresh basil leaves, thinly chopped
Salt and Pepper to taste
1 baguette French bread or similar Italian bread
Chop tomatoes, add basil. Mix the vinegar, oil, garlic, salt and pepper. Add to the tomatoes and combine well. Serve with slices of French or Italian Bread! Enjoy!
